This blend is primarily Sauvignon Blanc with a touch of Semillion and a hint of Muscat to add a bit more complexity and aroma to the wine. This is an austere, clean, mineral-laden wine. It has bright, clean flavors of white-stone fruit with a touch of kiwi. It simply smells like the outdoors. It has a creamy finish nuanced with a bit of grapefruit and Meyer lemon. Although under the government rules for classifying wines this easily meets the criteria for us having called it a Sauvignon Blanc, we chose to let you see what Gustavo can do with his blending expertise. The great acid balance in this wine really sets it up as a food wine. We’ve served this with seared scallops as well as with spicy Thai food. No matter what the blend, the 3rd Bottle wines always offer a great value for the money.
